Potatoes are the world's fourth largest food crop..

One medium sized potato, eaten with the skin on is just 110 calories, has nearly half of the daily value for vitamin

C and is a good source of potassium, providing 20% of the recommended daily value; it also contributes 2 grams

of fiber or 8% of the daily value per serving. Potatoes are a good source of vitamin B6 with 10% of the

recommended daily value, and finally provide 6% of the recommended daily value of iron.

Potato plants grow to about 60 cm (24 in) high, depending on variety. They bear white, pink, red, blue, or purple

flowers with yellow stamens. The tubers of varieties with white flowers generally have white skins, while those of

varieties with colored flowers tend to have pinkish skins

Potatoes interfere in the market in different forms whether as table potatoes, chips or as frozen potatoes

The Egyptian potatoes are well-known of its good quality whether for the potatoes grown in clay or sandy soil.

The Egyptian potatoes are also well-known of its ability for preservation , the level of solidity and sugar for a

period that exceeds twenty days from the day of harvest.
